What are ways that mounted warriors could use horses against infantry?

What sort of mounted warrior are you?

A 19th century French cavalry officer in white jodhpurs and black boots astride a dark muscular horse.

A shining knight in heavy amour, riding a huge destrier.

A primative native warrior dressed in skins riding a light pony.

Do you prefer to address a well matched enemy?

Yes, I wish to face a gallant antagonist on the field and defeat him through my skill as a mounted warrior.

No, I wish to ride through a poorly matched foe and cut them down like daises.

What is the best way to address an company of enemy on foot?

Ride into them with lances lowered. Run the bravest through and then dispatch the rest with broadsword.

Ride among their ranks and cut them with sabers.

Ride into them and ram them with your mount. Saber them while defenseless, as they crawl about dazed on hand and knees.

Ride them down and ride over them, making your horse tread upon them. Rein back and piaffe on them, using your mounts hooves to finish the job if the opportunity presents itself. Saber those then try to run.

Ride around them out of reach and shower them with arrows.

How to deal with the prisoners?

Bind their wrists lead them away, running behind your horses. They will make good slaves and free you from much manual labor.

Rope them and lead them behind the mounted column, three days back to your stronghold. Present them to your king or queen.

Take no prisoners.

How to deal with the wounded:

If they can stand, treat them as any other prisoner, so long as they can keep up.

Strip them of vaulables, then leave them on the field for whatever fate awaits them.

Ride among those lying on the field. Any who may be living, ride over them and see if they cry out. Stand your mount upon them until they are silent, and then yet a little longer.

Ride among them and practice your equestrian skills, the piaffe and the passage. Trample the vermin under hoof with style, after all, you were manor born and they are merely dirty peasants.
