What do you do with system logs?

In a former job I fed all messages to a central syslog server. I ran swatch on it and played sounds when interesting things happened.

It stayed in the background until something happened. I caught a number of memory and disk errors before they caused issues. I'm planning on doing it again.

Umm and I deleted the logs after a month....
