I am writing a new poll. Do the time lags between creation of the poll and the responses vary from poll to poll?

I'm not sure what you mean by "time lag". If you're asking how long it takes for a poll to be reviewed, approved, and placed into the directory, it does vary. We finally caught up on our backlog over the weekend (yea!), so right now, it's taking 24 hours or so.
